Two Sume Riesling Sparkling Wine

The great German white wine grape variety Riesling, thanks to its naturally high acidity, is perfectly suited for sparkling wine production. From the outset, ZWO SUME's goal was to create a sparkling wine that isn't overtly fruity, but rather elegant and sophisticated. For the Zwo Sume Riesling Sparkling Wine, the two Heidelberg winemakers therefore selected a plot with a particularly characteristic soil profile. The vines grow on barren shell limestone soils, resulting in mineral base wines with subtle fruit. We preserve these special characteristics through hand-picking and fractional whole-bunch pressing. The wine is aged exclusively in stainless steel tanks.

The base wine is sulfurized shortly before Christmas to prevent malolactic fermentation. The wine matures on the fine lees until bottling in May, during which time the young wine clarifies so well that filtration is completely unnecessary. The Zwo Sume Riesling Sekt matures for at least 18 months in the bottle before disgorging.
