MATERIAL AND PRODUCTION

RECIPE
For the dough
- 250 g butter
- 250 g cane sugar
- 200 g sugar beet syrup
- 1 tbsp cinnamon
- 2 tsp gingerbread spice
- 100 ml water
- Approx. 800 g flour
- 1 tsp baking powder
- Toothpick to remove any dough residue in the cutter
PREPARATION
TIP TO START WITH:
Always work with cool dough so it doesn't stick.
Also, roll it out to about 3 mm thick. If it gets too thick, it will get stuck in the cutters and you'll have to start over.
Be sure to flour the rolled-out dough to prevent any sticking to the delicate cutters. Set aside a toothpick to remove any bits of dough, such as the animal's eyes, before cutting out the next cookie.
- Heat the butter, sugar, and syrup in a saucepan until the sugar has dissolved. Stir constantly to prevent burning. Stir in the spices, remove the pan from the heat, and let the mixture cool to lukewarm. Then slowly stir in the water.
- Combine flour and baking powder in a bowl. Add the mixture and knead with a dough hook until a smooth dough forms.
- Wrap the dough in cling film and place it in the refrigerator overnight.
- The next day, preheat the oven to 180 °C top/bottom heat.
- Line baking trays with baking paper.
- Remove the dough from the refrigerator and roll it out on a floured surface to a thickness of approximately 3 mm. Flour the dough before cutting out the shapes to prevent any snagging.
- Cut out shapes and place them on the baking sheets. Since the dough retains its shape during baking, the dough motifs can be placed directly next to each other on the baking sheets.
- Baking time per tray: 8-12 minutes in the middle of the oven, depending on the size of the motifs.
- After baking, let it cool on the rack.
